Chef, Japanese Dining – Sands China Limited To achieve and maintain a reputation for Sands China Limited (SCL) as an exciting dining destination well known for a good range of quality food and beverage that represent value for money. To manage the operation of the Japanese outlet, providing supervision, direction and leadership to Chefs, Sous Chefs and Cooks on shift and to monitor efficient and optimum levels of service standards. Work closely with a team of food and beverage personnel, to manage the shift and at the same time meet guest needs. Be knowledgeable about Japanese heritage and service. Be conversant with the foods that are served in the restaurant. Be prepared to work in other Food or Beverage outlets as and when required. To help instill the perception in the minds of people in Macau, Hong Kong and China, that Sands is an Establishment which exudes gracious living. To perform all duties in accordance with SCL policies and within the realm of the SCL Company vision, mission and values. Responsibilities Support the objectives of the Property Executive Chef through diligent and proactive management of the Work with Property Executive Chef to formulate new promotional ideas that would impact the revenues and profitability of the outlet. Review operating results with the team and identify opportunities to improve performance. Attend pre‑shift meeting with staff and review all information pertinent to the day's business. Be prepared to work in a different outlet or assume a "hands‑on" role where the situation calls for it. Anticipate heavy business times and organize procedures to handle extended waiting lines. Seek support from other outlets where appropriate. Supervise, mentor, train, schedule and evaluate Team Members. Create a work environment that promotes teamwork, performance feedback, recognition, mutual respect and team member satisfaction. Liaise with the service team to maintain a smooth flow of service. Monitor guest reactions and confer frequently with service staff or captains to ensure guest satisfaction. Handle guest complaints and comments and deal with unexpected situations. Qualifications Minimum 15 years Japanese culinary experience. Must be able to speak basic English or Chinese and be fluent in Japanese. Previous working experience in a Michelin level Japanese restaurant is preferred. Previous working experience in Macau or Hong Kong preferred. Passionate about the food and beverage industry. Satisfactorily communicate with guests, management, and co‑workers to their understanding. Willing to work under pressure & be a good team player. Can complete tasks in a timely manner.
