About The Job Based at The Landmark Mandarin Oriental, Hong Kong within the Pastry Kitchen, the Executive Pastry Chef is responsible for supervision and coordination of the preparation and production of all pastries, chocolates and bakery items in accordance with the highest standards, menu planning and cost control. The position reports to the Director of Culinary Operations & Food & Beverage. Responsibilities Oversee daily pastry production and delegate responsibilities to the Pastry Sous‑Chef and team. Collaborate with the Chef de Cuisine and senior managers on new concepts and ideas, including conceptualising spaces or venues and contributing to financial projections. Maintain hygiene and cleanliness standards, working closely with the Stewarding team and monitoring all HACCP‑related issues. Control par stock of mise‑en‑place, packaging and food items. Manage logistics of all food items for festive and special promotions. Account for the departmental operating budget. Maximise sales and revenue, improving operational efficiency. Propose and initiate new services and products, issue recipe cards and conduct spot‑checks for quality. Consult directly with clients for catering events to create custom menus. Required Qualifications 10+ years of pastry operations experience, preferably in a luxury hotel. Experience in Asia is an advantage. Strong knowledge of food & beverage and menu planning. Creative, proactive, and self‑motivated. Excellent interpersonal and leadership skills. Detail‑oriented, well‑organized and responsible. Computer proficiency in major software.
