Responsibilities Efficiently manage food costs, kitchen supplies, energy expenses, and utensils. Oversee kitchen operations to ensure compliance with quality and hygiene standards. Support strategic purchasing initiatives to optimize food costs while maintaining quality standards. Identify and implement operational improvements to enhance client satisfaction and overall efficiency. Assist in planning and supervising the Sous Chefs, Chef de Partie, Demi Chef, and Commis for effective kitchen operations. Demonstrate creativity in food presentation, menu planning, and cost control, with comprehensive knowledge of hot and cold kitchen operations. Promote energy conservation initiatives across all kitchens to reduce consumption. Foster positive relationships with all departments to ensure consistent cooperation and communication. Adhere to relevant legislation, including licensing, health, fire, and safety regulations. Assist in developing annual marketing plans, budgets, and promotional activities for the kitchen. Ensure compliance with disciplinary and grievance procedures within the kitchen team. Address customer feedback promptly and effectively, collaborating with relevant department heads as needed. Requirements A minimum of 15 years of relevant experience in a prestigious hotel or club, including at least 3 years in a senior supervisory role, such as Executive Sous Chef or Chef de Cuisine. Extensive international experience in both Western and Asian cuisines, with a preference for candidates familiar with multi-outlet operations. Strong understanding of food safety standards; HACCP certification is essential. Proven ability to read and interpret safety regulations, operating instructions, and procedure manuals; capable of writing reports and correspondence and effectively communicating with staff and customers. Skilled in performing calculations related to discounts, proportions, and measurements, and applying mathematical concepts to practical kitchen scenarios. Competent in problem-solving, data collection, and drawing valid conclusions from diverse technical instructions. Strong leadership, organizational, and planning skills, with the ability to train and coach team members effectively. Good computer literacy, including knowledge of Word, Excel, online ordering systems, and scheduling tools. Proficiency in both written and spoken English is required. Capable of managing physical demands in a busy kitchen environment, handling long hours, and maintaining focus in stressful situations, including working with hot stoves, refrigerators, and freezers.
