Hyatt Centric Victoria Harbour Hong Kong is an abiding big family thronged with fueled enthusiasts Care is at the heart of our business; we care for people so they can be their best To support the pre-opening of Sichuan Verandah, Hyatt Centric Victoria Harbour Hong Kong is seeking a talented Chef de Partie (Sichuan Cuisine) This role is ideal for a passionate Sichuan cook ready to take ownership of a station and grow in a high-profile, authentic Chinese restaurant為配合北川小館的開業,香港維港凱悅尚萃酒店誠聘具才華的川菜主管廚師(Chef de Partie – Sichuan Cuisine) 此職位非常適合熱愛川菜、希望負責獨立崗位並在高端正宗中餐廳中發展的專業廚師 Responsibilities 職責 Prepare, cook and present Sichuan dishes according to standard recipes, portion sizes, and quality guidelines 按標準食譜、份量及品質指引,準備、烹調及呈現川菜菜式 Ensure consistency in flavour, texture, and presentation, maintaining the authentic taste profile of Sichuan cuisine 確保菜式風味、口感及擺盤一致,保持川菜正宗味道 Assist with mise en place planning, stock rotation, and daily ordering 協助計劃備料、食材輪換及每日訂貨 Maintain cleanliness and organization of the station and work areas at all times 隨時保持工作崗位及廚房區域清潔整齊 Follow all food safety, hygiene and sanitation standards as per hotel and local regulations 嚴格遵守酒店及本地法規的食品安全、衛生及清潔標準 Contribute ideas for new dishes and improvements during menu development and tastings 於菜單開發及試菜過程中提出新菜式及改進建議 Qualifications 資格 Minimum 3 years of experience in professional Chinese kitchens, with at least 2 years as Chef de Partie or strong Demi Chef experience in reputable hotel’s Sichuan or regional Chinese cuisine 至少 3 年專業中餐廚房工作經驗,其中 2 年或以上擔任主管廚師或具備副主管廚師豐富經驗,並曾於知名酒店的川菜或中國地方菜餐廳工作 Solid wok skills and strong practical knowledge of Sichuan cooking methods, sauces, and ingredients 熟練鑊功,具備川菜烹調方法、醬料及食材的實務知識 Experience in hotel or quality standalone restaurant environments preferred 具酒店或高品質獨立餐廳工作經驗者優先 Good understanding of basic food safety and hygiene practices; HACCP exposure is an advantage 熟悉基本食品安全及衛生操作;具食物安全重點控制(HACCP)經驗更佳 Team oriented, positive attitude, and able to work under pressure during busy service periods 具團隊精神、積極態度,能於繁忙服務時段承受壓力 More Job Information Job Function 餐飲 · 酒店 - 餐廳主任 · 經理 Location 北角 Employment Term 全職 #J-18808-Ljbffr
