About the job Based at the Mandarin Oriental, Hong Kong within Food & Beverage Service Division in Hong Kong, the Stewarding Supervisor - Terrace Boulud is responsible for daily supervision of the Stewarding operations, ensuring proper handling, washing, and storage of chinaware, glassware, silverware, and other items, as well as maintaining cleanliness in all operation areas. The Stewarding Supervisor - Terrace Boulud reports to the Restaurant Manager - Terrace Boulud. As Stewarding Supervisor - Terrace Boulud, you will be responsible for the following duties: Ensure that all Food and Beverage back of the house areas are cleaned up to the hotel’s set standards and that there are no infringements of health and safety of fire regulations Conduct daily hygiene and cleaning checks of all operation areas to ensure they are clean and in good condition Ensure that all operating equipment is handled and stored in a correct manner in all areas Ensure that all operating equipment is washed and cleaned in the correct manner Familiarize with the handling and use of all cleaning equipment used in Stewarding and ensure that all staff is familiar with their correct use Control stores operation and monitor the re-ordering level Monitor the sanitation check system by using the daily sanitation and cleaning check lists Perform any other reasonable duties as required by the department head from time to time As Stewarding Supervisor - Terrace Boulud, we expect from you: At least 4 years of relevant working experience in similar capacity in hotel Food & Beverage, preferably with pre-opening experience in a luxury hotel Good command in spoken English, Mandarin and Cantonese Flexible and willing to work shift duties Our commitment to you Learning & Development.
