Asst. F&B Director - Hotel Luxury Chinese Dining (Macau) Assistant Director of Food & Beverage – Luxury Hotel (Based in Macau) Mission: As the custodian of our F&B legacy, you will provide strategic direction and operational oversight for the diverse portfolio of luxury restaurants and bars. You will be a mentor to the management teams, an ambassador for the brands, and a key player in achieving both financial success and industry acclaim. Your leadership will ensure that every aspect of our F&B offering, from luxury restaurant outlet to bars, delivers a flawless and exceptional guest experience. Key Responsibilities: Strategic Leadership & Business Acumen: Partner with the Director of F&B to develop and execute the annual business plan, budget, and financial forecasts for the department. Analyze P&L statements, drive revenue management strategies, and implement cost‑control measures without compromising quality. Identify market trends and new opportunities for revenue growth and concept development. Culinary Excellence & Brand Stewardship: Champion the unique identity and uncompromising standards of each outlet, ensuring consistency and innovation across all concepts. Lead the charge in our pursuit of and retention of the industry’s highest accolades (Michelin, Forbes, Black Pearl, etc.). Foster a culture of continuous improvement, working closely with Executive Chefs and Restaurant Managers to refine menus, service standards, and the overall guest journey. Attract, mentor, and develop a high‑performing team of F&B managers and staff, creating a pipeline of future leaders. Implement comprehensive training programs focused on technical skills, product knowledge, and the art of luxury service. Operational Execution & Guest Experience: Oversee daily operations to ensure seamless service, impeccable hygiene (HACCP), and strict adherence to all safety standards. Personally engage with guests to build rapport, solicit feedback, and resolve any concerns with discretion and urgency. Drive the strategic response to guest feedback, turning insights into actionable improvements. The Ideal Candidate Profile: A minimum of 10 years of progressive leadership experience within Food & Beverage, with a significant portion gained in Michelin‑starred environments and5‑star international hotels or resorts Chinese luxury restaurant background is a MUST At least 5 years in a senior leadership role with stable career track record A proven track record of guiding luxury venues to financial success and critical acclaim. Experience in pre‑opening or major renovation of luxury F&B establishments is highly advantageous. Prior experience within a large‑scale, integrated resort or casino‑hotel environment is preferred. Mandatory fluency in spoken and written Chinese (Cantonese/Mandarin) and English. Exceptional financial and business literacy, with expertise in budgeting, forecasting, and P&L management. A charismatic leader with proven ability to inspire, motivate, and hold teams accountable to the highest standards.
