What you will do: Work with Outlet Manager / Head Sommelier of Grand Hyatt Hong Kong to continually improve One Harbour Road wine offerings. Analyze sales performance and profitability of existing wine lists to improve customer satisfaction and profitability by enhancing the hotel's International Wine List. Maintain a close relationship with all wine agents/importers to secure first-hand options on special wines, available in limited quantities or allocations. Develop and recommend appropriate pricing strategies for the designated operation. Prepare wine promotional plans, including wine promotions, wine maker's events, wine-by-the-glass programmes, and other related initiatives. Review all slow-moving items and recommend actions, such as further cellaring, special promotions, or bin-end sales. Ensure that all service associates are fully versed in wine up-selling techniques and possess a good level of product knowledge. Create and manage the beverage program of the outlet and hotel to offer a selection that suits the restaurant concept and local market's expectations.
