Mandarin Oriental, Hong Kong is looking for a Restaurant Manager – Terrace Boulud to join our Food & Beverage Service team. About the Job Based at the Mandarin Oriental, Hong Kong within the Food & Beverage Service Division, the Restaurant Manager – Terrace Boulud is responsible for the smooth day‑to‑day restaurant operations, achievement of the financial targets, and elevation of service quality up to the Hotel’s standards. The Restaurant Manager reports to the Director of Operations – Terrace Boulud. Responsibilities Maintain smooth daily operations and administration. Advise and consult with the Director of Operations – Terrace Boulud on service procedures, quality and quantity of products, menus, merchandising and promotional programmes. Liaise closely with the Executive Chef and Sous Chefs regarding food quality or presentation. Maintain high‑quality products and services and correct any deficiencies. Deliver an elevated guest experience aligned with MOHG standards, monitor guest feedback channels, handle guest complaints, and lead initiatives for improvement. Enforce rigorous hygiene and sanitation protocols in full compliance with HACCP requirements. Set up an annual budget and labour forecast, reviewing monthly targets. Analyze business performance continually and seek ways to improve results, reduce wastage, and maximize revenue. Recruit, onboard, provide departmental training, and develop professional development plans for colleagues to achieve departmental goals and total guest satisfaction. Qualifications At least 5 years of relevant experience in a similar capacity in hotel Food & Beverage, preferably with pre‑opening experience in a luxury hotel. Strong communication skills and proficiency in Cantonese, English, and Mandarin. Demonstrated success in achieving financial targets and maintaining high‑quality standards. Excellent leadership and interpersonal skills. Passion for customer service and the hospitality industry. International exposure is an advantage.
